Quick and Easy Homemade Pizza

My best friend is probably the best, “home cook” I know. She can make chocolate chip cookies look like a gourmet meal. She also taught me that not all good food is pretty and not all pretty food is good. And this sometimes ugly, but good quick and easy homemade pizza is totally her idea.
I always call her on my way out to the grocery store when I’m making something different for dinner. That’s if I cook! I know that’s horrible, but I’m trying to do better. She has the ability to tell you everything you need without evening thinking hard. I chatted with her regarding this quick and easy homemade pizza before selecting my fresh ingredients. She had some great pointers for meat options. She uses lunch meat for ham and turkey options. Which I am going to try in the near future.

Once we had a girl’s day at her house and she made everyone a version of this quick easy pizza with toppings of their choice. I was inspired, because it was so simple and easy. I never thought, having ingredients on hand for a quick and easy homemade pizza would be a thing this southern chick would do. But when you tell me that I can just buy the pizza sauce and dough already prepared then that is another story.

It’s totally a pizza that will please a crowd and everyone can select their own toppings.

Anyhow for some reason, I bought 3 cans of thin crust pizza dough by Pillsbury and before they go bad I wanted to make some homemade pizzas. Yeah, prepared pizza dough for this southern chick is about as homemade as it gets. This a quick and easy homemade pizza that can be served for a girl’s night, kid friendly or any other occasion that cheese is appropriate. And in my world cheese is one of those things that makes everything better.

Ingredients

  • Philbury Thin Crust Pizza Dough
  • Pizza Sauce
  • Ground beef
  • Onions
  • Tomatoes
  • Mushrooms (fresh or canned)
  • Purple Onions
  • Mozzarella Cheese

Instructions

  1. Pre-heat oven according to package
  2. Cook all meat ingredients
  3. Slice tomatoes, onions, mushrooms etc.
  4. Roll dough onto pizza pan and spread pizza sauce according to taste
  5. Then layer on the mozzarella cheese and toppings but not too much
  6. Put in oven for 12 -14 mins (according to package)

Notes

Make sure oven is pre-heated or you may have raw dough. Also feel free to select any fresh toppings.

There are no words to describe my love for my Mama There are no words to describe my love for my Mama fully. She was my biggest fan, my greatest supporter, and the one who helped me navigate life through its many ups and downs. She prayed for me, encouraged me, and always believed in me, even when I doubted myself.

I owe her my life's work and every accolade I've achieved. She saw me through undergrad, guided me as I navigated Corporate America—even though she had never experienced it herself—and kept me grounded through it all. 

She prayed with me in moments of joy and in times of need. She stood proudly by my side on my wedding day and cried with me through some of the most challenging moments of my life.

My mom saved my life in more ways than I can count. Her love and guidance shaped the person I am today, and her passing has forever changed me.

On November 26, 2024, Esther Gleaton went home to be with her ancestors. I find comfort in knowing she is finally at rest, free from pain, and in eternal peace. 

My mother bravely faced a short but aggressive battle with Plasma Cell Leukemia, spending 72 days fighting inpatient at the Northside Hospital Cancer Bone Marrow Transplant Unit. She fought with courage, grace, and incredible strength.

In sickness and health, my father, Orbie Gleaton, was by her side daily. He saw her through the very dark days and celebrated the joyful moments with her. 

His love and devotion to my mom never wavered—he never left her side. The love they shared is eternal and serves as a beautiful testament to the bond they built together.

Mama, your love will guide me forever. You are my heart, and I will carry you with me always.
